Some of my favourites kinds of evenings are the ones that involve a good film and, more importantly, good food. I love a sweet treat as much as the next person, but I am also an incredibly impatient come 8 pm, as such I have been trialing out a few different healthy snacks recipes that don’t include sitting and staring into the oven for half an hour. Quick by nature popcorn is undeniably the perfect can’t really be bothered treat. Speaking of which I thought it would be fun to share with you one of my all-time favourite recipes. Featuring dark chocolate and sea salt this mouthwateringly delicious snack strikes the perfect middle ground between sweet and salty. Perfect for snacking, film watching or just general munching this quick and easy snack is great two in one (crunch snack and dessert) – why not give it a go and see for yourself!
Portion size: Serves 3 to 4
You will need…
- 1 tablespoon coconut oil (or any oil that you fancy)
- 1/3 cup organic popcorn kernels
- 100 grams of good-quality dark chocolate (I like to use Green & Blacks 70% Cocoa)
- A few large pinches of sea salt
Step one: In a medium pot, heat the oil until it is very hot (be careful it can spit).
Step two: Turn the heat down to a medium intensity and then add 3 kernels of popcorn, cover and wait until all 3 kernels pop.
Step three: Pour the remaining kernels into the pop. Cover and shake to distribute.
Step four: As the popcorn pops, shake the pan occasionally and immediately remove from heat once the popping slows to 2-3 seconds between pops.
Step five: While the popcorn is still warm grate the chocolate on top with a cheese grater, mixing it in thoroughly whilst doing so.
Step six: Add a couple of pinches of salt, and mix well.
Step seven: Pour into a bowl and then pop it in the fridge for 5 to 10 minutes to let the chocolate set a little.
Step eight: Enjoy!
To Note: This popcorn keeps up to 3 days in an airtight container, but if you can keep it around that long, you are a much stronger person than I am.
